Bruschetta Chicken Bake - Great EASY Recipe!

BRUSCHETTA CHICKEN BAKE - close-to-orgasmic!

Yield: 6 servings

Ingredients:
  • 6, 4-ounce frozen boneless chicken breasts
  • 1 teaspoon dried basil leaves
  • 1 cup shredded mozzarella cheese
  • 2 1/2 cups Uncle Ben’s Classic Cornbread Stuffing mix
  • 1 1/2 cups canned diced tomatoes, UNDRAINED
  • 1/2 cup chicken broth
  • 2 teaspoons minced garlic in water
Cooking Instructions:
  1. Spray 9 x 13 pan with non-stick coating.
  2. Place 6 chicken breasts in bottom of pan.
  3. Sprinkle 1 teaspoon dried basil over chicken.
  4. Top with 1 cup shredded mozzarella cheese.
  5. In medium bowl, add:
    a. 2 1/2 cups cornbread stuffing mix
    b. 1 1/2 cups diced tomatoes
    c. 1/2 cup chicken broth
    d. 2 teaspoons minced garlic
  6. Stir just until stuffing mix is moistened.
  7. Top chicken with stuffing mixture.
  8. Spray inside of pan lid with non-stick coating. Cover and label pan.
Preparation: Thaw completely. If frozen or partially frozen, add 5-10 minutes baking time.

Cooking Instructions: Preheat oven to 400F. Remove lid from pan, and place pan on baking sheet. Bake 30 minutes (20 minutes for half entrée) or until internal temperature of chicken is 165F on instant read thermometer. Cooking times may vary due to differences in ovens.
